BBQ recipe: Atomic Ribs and Sauce

Serves 4 to 6

Note: St. Louis-style ribs are some-more docile than untrimmed pig spareribs. If you use baby behind ribs, revoke oven cooking time (step 6) to 1 to 2 hours. ¼ cup sliced preserved banana peppers, chopped fine, plus 2 tablespoons pickling liquid

2 cups wood chips

For a sauce

Whisk all reduction together in bowl. Season with salt and peppers to taste. (Sauce can be refrigerated for adult to 4 days.)

For a ribs

  1. In a bowl, mix paprika, chile powder, sugar, pepper, salt and cayenne. Pat ribs dry with paper towels and massage uniformly with piquancy mixture.
